Vegan Pancakes with salty date Caramel (serves 1-2 people)
Ingredients:
85g Spelt Flour
1,5 Tsp. Baking Soda
1 Tbsp. Apple Pulp
150 ml plant-based Milk (e.g. Almond Milk)
1 Tsp. melted Coconut Oil
2 Tbsp. Maple Syrup
100g Dates
A dash of Salt
(Optional: Fruit)
Soak the dates in a bowl with warm water. In a frying pan, melt 1 teaspoon of coconut oil over medium heat, stirring all other ingredients (except the dates and salt) to a dough. Pour 1-2 tbsp. of the dough into the pan and bake evenly on both sides. For the date caramel, place the dates (pitted) in a Food Processor with a little lukewarm water and a pinch of salt. Gradually add some water until the caramel gets the desired consistency.

Summer salad with fried peach (serves two people)
Ingredients:
100g salad
100g feta cheese
2 peaches
100g strawberries
3 Tbsp. olive oil
1 Tsp. coconut oil
Juice from half a lime
Salt, pepper
Sauté the peaches in coconut oil until browned. Chop the strawberries and the feta cheese. Mix olive oil, lemon juice, salt and pepper into a dressing. Put everything in a bowl - done!

Broccoli Salad (serves 1-2 people)
Ingredients:
1 Broccoli
½ Onion
1 green Apple
200g Almond flakes
1 Lemon
Olive Oil
A little bit of Mustard
Salt, Pepper
Cut the broccoli into small pieces and sauté briefly. Roast the almond chunks in a pan. Finely dice the onion and apple and mix everything together in a bowl. Squeeze the lemon and make a dressing for the broccoli salad using olive oil, mustard, salt and pepper. Put everything in a bowl and you're done!

Zucchini noodles with fried vegetables (for two people)
Ingredients:
1 Onion
1 big or 2 small Zucchinis
1 Paprika
200g Tomatoes
100g dried Tomatoes
50g Pine Nuts
2-3 Tbsp. Olive Oil
Fresh Basil
Oregano, Rosemary, Salt, Pepper
Cut the vegetables. Fry onion, paprika, 100g fresh tomatoes and 50g dried tomatoes in 1 tablespoon olive oil. Meanwhile, chop / puree the remaining tomatoes, 50g dried tomatoes, pine nuts and 1-2 tablespoons olive oil in a Food Processor. Cut the zucchini into Spaghetti with a spiral cutter or peeler. Add the tomato and pine seed mixture into the pan with the vegetables. Add the spices to taste, mix with the zucchini noodles and garnish with some basil!

Cucumber Soup (serves 2 people)
Ingredients:
1 Cucumber
1 Spring Onion
1 bunch of Mint
Juice of a Lemon
200g plant-based Joghurt
Salt, Pepper
Pour all ingredients into a blender and mix to the desired consistency. Pour into a bowl, garnish with a few leaves of fresh mint and season if necessary.

Infused Water (for at least 1 liter)
Ingredients:
1 Orange
1 Apple
1 Sally Seaberry Shot
Icecubes
1 liter of Water
Cut the orange and apple into slices and put into a carafe. Add 50ml Sally Seaberry. The Infused Water gets a really fruity taste with an extra amount of sea buckthorn! Fill up with water afterwards. Add ice cubes for an additional cold kick.
